Providing yourself with a healthy lunch is one of the best things you can do for yourself to foster scholastic achievement and most importantly healthy eating habits.
Most of college students are very active and participate in after school activities such as fraternities, sororities, tutoring, etc. It is important that we bring a good lunch and snacks to encourage success.
These easy lunches are healthy, balanced, and easy!
1)YOGURT PARFAIT
For some of us who don't really eat meat as much this is a great way to get your protein. Instead of packing a turkey sandwich for a snack make a delicious yogurt parfait.
Directions: Pack 1 cup of Greek yogurt mixed with half a cup of your favorite low sugar fruit. Some of these fruits can be berries or apples. In smaller container add a granola and almonds.
Some of us may be tired of eating the same things over and over again. We are all in a rush before school so something easy would be extremely beneficial. A whole wheat pita serves as a perfect healthy lunch. Which is very easy to add vegetables.
Directions: To make this pita bread slice chicken breast that you made the night before and then add it to the pita with veggies such as peppers, mushrooms, spinach, and carrots. Drizzle meat and vegetables with olive oil based Italian dressing and hummus. This is a perfect lend of healthy fats, lean protein, complex carbs, and fiber.
This tuna wrap is another way to eat your protein for the day. The meat is very light so it wont feel like eating a huge piece of steak.
Directions: Place some low fat cheese inside the whole wheat wrap. Combine tuna with some mashed avocado as a replacement of mayonnaise. Add sliced cucumber, sliced carrots, and salt and pepper. After, wrap it place a toothpick to hold it together and place it under the broiler for thirty seconds.
